Sesame Chicken

First week back of the school term, and so far so good! The kids were exhausted by this afternoon, which meant a lot of bickering during the evening but a very easy bedtime.

I started my oldest at gymnastics this week which she absolutely ADORED...I even had a lot of fun, as full adult participation is encouraged so I really got into it and did my first handstand in a very long time. Both of us came away from the class with big smiles on our faces which was a great way to start the day. Looking forward to a nice quiet weekend though...no plans as yet, which can be a very nice feeling sometimes.

I have a recipe to share tonight which I borrowed and adapted from a great website called www.crunchymama.net.

This delicious Sesame Chicken was very child friendly, very easy to make, and very very delicious. You will find yourself going back to seconds, so I recommend making extra!

Served ours with pan fried bok choy and brown mushrooms, and steamed rice - the dish is so versatile you can serve it any way that works for you

Sesame Chicken (adapted from www.crunchymama.net)

Ingredients:

1kg chicken thighs, cut into bite-sized cubes
3 cloves of garlic, minced
2 green onion, finely chopped
2 TBSP untoasted sesame seeds
1/2 cup tapioca flour
coconut oil for frying (or oil of your choice)

Marinade:

1 tbsp coconut aminos (or tamari if you prefer soy or it's what you have in the cupboard)
1 tbsp tapioca flour (arrowroot)
1 egg

Sauce:

3 tbsp coconut aminos (or tamari)
2 tbsp red wine vinegar (red wine vinegar)
2 tbsp raw honey
2 tsp sesame oil
1 tsp tapioca flour (arrowroot)
1 tsp sea salt

Directions:
1. Mix chicken with marinade (blend the three ingredients in a large bowl then add chicken and mix until all chicken is well coated) and let it sit for at least 30 minutes
2. Combine sauce ingredients and set aside
3. Heat about 1 tbsp oil in a large frying pan over medium heat
4. Coat chicken pieces in tapioca flour and fry until cooked through
5. Remove chicken from frying pan and drain on a paper towel
6. Wipe frying pan clean. Heat another tbsp oil over a medium heat
7. Stir fry garlic for a minute or so until the aroma is released
8. Add sauce and heat until thickened
9. Add chicken back to skillet and cook until all pieces are coated evenly with sauce
10. Remove chicken from heat. Add sesame seeds and mix with chicken.
11. Place chicken on a large serving platter and garnish with green onion and a few extra sesame seeds
12. Serve with steamed green vegetables and rice, or sides of your choice.
